Yoshikane Japanese Kitchen Knives Yoshikane is one of the leading names in traditional style Japanese knives. We sell one premium line of Yoshikane knives. It is made with a state of the art Aogami (Japanese Blue Steel) high carbon steel core, sandwiched between two layers of stainless steel. These are Yoshikane's top-of-the-line knives and are all hand made by master craftsmen. Like any high carbon steel, the Aogami core is not stainless and will rust if it is neglected. It will also hold an edge better than any stainless steel made. This is the trade off. Similar Yoshikane knives are also commonly sold in this country with a textured surface above the bevel and made from V2 steel. V2 steel is professional grade, but it is a cheaper and somewhat inferior alternative to the top-of-the-line Aogami steel line which we offer. We feel that these Yoshikane knives are among the very finest traditional Japanese knives available today and are designed to last a lifetime of professional use. These knives are really made for the professional market in Japan, and are ground with the edge bevelled only on one side, which is the traditional Japanese way. The handles are magnolia with exotic wood ferrules. |
