Tadafusa Carbon Steel Japanese Kitchen Knives Tadafusa is one of the leading names in traditional Japanese knives. Our Tadafusa knives have a carbon steel core (Japanese blue steel, which is not stainless) forged between two layers of stainless steel. This combination offers the best of both worlds, the great performance of carbon steel, with some of the advantages of stainless steel. Carbon steel is easier to sharpen than stainless steel but has excellent edge retention. These knives do need more care than an all stainless steel knife, and can not be left wet or the edge will rust. All of our Tadafusa knifes come with a traditional Japanese right handed contour magnolia wood handle with an exotic wood ferule.
