Sabatier Carbon Steel Knives

Thiers-Issard have been hand-crafting knives in Thiers France, under the Sabatier brand with the **** Elephant logo. Once all fine cutlery was made from carbon steel. Today most kitchen knives are stainless steel, but Sabatier still offers a fine selection of traditional French chefs knives in carbon steel. Stainless steel cutlery is certainly more care free, but nothing can match the edge retention and ease of sharpening of fine carbon steel knives like these from Sabatier. Of course, if you neglect carbon steel knives they will rust.

Sabatier knives are forged out of a single piece of steel. All Sabatier knives but the nogent knives have a full length integral tang and bolster with traditional riveted handles, providing the perfect balance and alignment needed for comfortable all day use. Of course Sabatier carbon steel knives require a more care than stainless steel, but these Sabatier knives will give you unmatched performace and longevity in return. Over time, Sabatier carbon steel chefs' knives will develop a pleasing patina.

The Thiers-Issard Sabatier carbon steel knives on this page are the full range of Thiers-Issard Sabatier new production carbon steel knives. We also offer Thiers-Issard Sabatier historical carbon steel knives, which are knives that have been newly ground and handled, from left over pre Second World War forgings. The new production Thiers-Issard Sabatier knives seen on this page are available with two handles, a red stamina handle, which is an epoxy impregnated wood that simulates rosewood, and solid olive wood. The red stamina handles are more water resistant and require less care than the olive wood handles, but it would be hard to imagine a more beautiful traditional handle than the olive wood ones. The olive wood handles should be rubbed with olive oil occasionally to keep them looking their best.

Please Note: Several companies share the right to use the Sabatier name. Only Thiers-Issard uses the elephant logo and this distinguishes the French made Sabatier knives which we sell. It is our belief that these are the finest French made knives available today.
