Sabatier **** Elephant logo knives by Thiers-Issard are offered in two distinctly different types: Sabatier stainless steel knives that stay sharp, bright, and shiny, and Sabatier carbon steel knives which are known for their razor edge and mottled patina. While Sabatier carbon steel blades may require a bit more care than stainless steel Sabatier knives, they are often the French chef's choice for a precision cut and an edge that stays true and sharp with basic maintenence. Thiers-Issard, handcrafting Sabatier knives in France for over a century and a half, is one of the few remaining companies that still make pure carbon steel knives. Thiers-Issard Sabatier knives, forged out of a single core of steel, both the stainless steel and carbon steel Sabatier knives provide the perfect balance and alignment that professionals need.
We offer Thiers-Issard Sabatier knives in both stainless steel and carbon steel, with various choices of handles and styles. In stainless steel we have 2 different patterns of Sabatier knives, the traditional French pattern, and a more Germanic style pattern similar to the German made knives which we sell and which are popular in American department stores. In carbon steel, we offer the same traditional French patterns as we sell in stainless, as well as historical knives, which are old forgings that were never ground and are now recently ground and finished. We have these historical carbon steel Sabatier knives in Nogent style and in a Canadian Massif style.
Please Note: Several companies share the right to use the Sabatier name. Only Thiers-Issard uses the elephant logo and this distinguishes the French made Sabatier knives which we sell. It is our belief that these are the finest French made knives available today.
