Hattori has been one of the leading names in Japanese knives for many years. We stock two lines of Hattori Japanese knives. This line, which is at the high end of the mainstream Japanese knife market and should meet needs of most connoisseurs, and an Hattori top-of-the-line range which is for the connoisseur who demands the very best of Japanese knives regardless of cost. Both of the Hattori knife lines which we stock are made for the Western market and utilize Western style forged bolster handles with Japanese style blades. All of the Hattori knives that we offer are Damascus knives, meaning they are made using the Damascus process of folding steel into thin layers. In the case of these knives, there are 63 layers of steel in each knife. The center core of the knife, which includes the cutting edge, is high-grade stainless steel hardened to a Rockwell of 60 - 61. Our own experience with tools and knives has show us that this is an ideal hardness if the steel is tough enough to handle it. The advantage of this construction is that the cutting edge alone can be made very hard, for good edge retention, while the rest of the blade is not hardened and remains tougher. The handles are Pakka, an Asian species of exotic wood.
