Hattori has been one of the leading names in Japanese knives for many years. This line, the HD series, is at the high end of the mainstream Japanese knife market and should meet needs of most connoisseurs. Hattori knives are made for the Western market and utilize Western style forged bolster handles. All of the Hattori knives that we offer have Damascus blades, meaning they are made using the Damascus process of folding steel into thin layers. In the case of these knives, there are 63 layers of steel in each knife. The center core of the knife, which includes the cutting edge, is high-grade VG-10 stainless steel, hardened to a Rockwell of 60 - 61. Hattori knives will hold a very fine edge for a long time, but we have found that the edge can be quite brittle, and if it is abused in any way, it will chip. If for example, you try to cut through chicken bone with a Hattori knife, it will chip. If you want a general purpose knife and you don't want to have to worry about being particularly careful with it, Hattori is not the right choice. The Hattori handles are made from highly durable Pakka wood, which is not wood at all, but a synthetic material.
