Hattori KD-30 Series Damascus Kitchen Knives
The Hattori KD-30 series line of Japanese knives is Hattori's top-of-the-range line for the real connoisseur of Japanese knives. Each of the KD series Hattorie knives is made from start to finish by a single master craftsman. These Hattori knives have the most dense Damascus (most layers) blades of any Japanese knives available today. The center core, which included the cutting edge, is made from Cowry X steel, an ultra-high grade Japanese stainless steel with a 20% chromium content. With its high chromium content, Cowry X steel is able to handle being hardened to Rockwell 63-65 and still hold a razor edge for an amazingly long time. The bolster is solid nickel for a very refined look. These Hattori knives really exemplify the Japanese knife as an art form. The handles are made from linen Micarta, the most durable form of micarta, which is a synthetic material. This knife is for the professional chef who will tolerate no compromises or the home chef for whom having the very best is important.
Due to the high demand and very limited production for these knives, each of which is hand made by Mr. Hattori himself, there are sometimes very long delivery delays. Any knife which is not in stock will be marked as B/O. Orders may still be placed below and they will be filled in the order they come in.
