![]() Hattori Damascus Japanese Kitchen Knives Hattori has been one of the leading names in Japanese knives for many years. We stock two lines of Hattori Japanese knives, the HD line, which is at the high end of the mainstream Japanese knife market and should meet needs of most connoisseurs, and the Hattori top-of-the-line range KD line, which is for the connoisseur who demands the very best of Japanese knives regardless of cost. Both of the Hattori knife lines which we stock are made for the Western market and utilize a Western style forged bolster with riveted handles. All of the Hattori knives that we offer are made using the Damascus process, meaning the blade is built up from many layers of very thin steel. In the case of the HD knives, there are 63 layers of steel in each knife, with around double that in the KD knives. The advantage is that the blade can be made very hard, for good edge retention, while at the same time maintaining its toughness by also including layers that are not as hard to maintain the toughness.
