Goyon-Chazeau Styl'ver Line of French Chef's Knives
Goyon-Chazeau is a small family owned knife manufacturer in Thiers, the ancient knife making capital of France. Unlike larger factories where advanced automation prevails, at Goyon-Chazeau, each and every knife is truly hand made by a handful of highly skilled artisans. The Goyon-Chazeau knife line that we offer is called the Styl'ver line, and was chosen by us because of its innovative and practical design. The Styl'ver knives are all stainess steel, but unlike similar Asian made knives, the handles on the Styl'ver knives are actually hollow. This makes the knives much more difficult to manufacture, but gives them a perfect balance that will allow a professional to use the knife all day long with minimal fatigue. The handle is made by welding two halves together, a very difficult operation that must be done by the most patriarch of the family. It is something special to watch this delicate welding being done. After finishing, this seam is so perfect that you will not be able to see it. The shape of the handle is also optimized for ergonomics, and feels very natural in the hand. To avoid beins slippery with wet hands, the handles are etched to give them a slip-resistant surface. The result is a high-quality knife of contemporary design that is embraced by professionals and discerning amateurs alike.
