The Best Things Carbon Steel Knives
Up until the last 50 years or so, pretty much all kitchen knives were carbon steel. Great knife making centers like Sheffield in England, Solingen in Germany, and Thiers in France, thrived for hundreds of years making carbon steel knives. Then, very quickly, these knives were replaced by stainless steel knives. Not because stainless steel performed better, but because it was more convenient. If there is one mantra of our times, it is that convenience takes precedence. Still, there are connoisseurs out there who know the value of a fine carbon steel knife. We salute these connoisseurs, offering a wide range of traditional French carbon steel knives, all of them from the great French knife making center of Thiers. Besides our Sabatier brand of French knives from Thiers-Issard, we also carry these more modestly priced house brand French carbon steel knives. These knives are of the same quality as our name brand knives but are marked with our logo rather than the famous Sabatier logo. The blades are identical in materials and quality. We offer two different handles, black nylon and bubinga.
